This delicious vegetarian side dish is perfect for a chilly fall or winter day.
3 cups cooked and mashed butternut squash
1/2 cup organic granulated sugar
1/2 cup packed brown sugar
1/4 cup butter, melted
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/8 teaspoon ground
1/3 cup chopped pecans (optional)
1. Preheat oven to 325 degrees F. Grease or spray a 2-quart casserole dish and set aside.
2. In a large bowl, combine all of the ingredients, except for the pecans, and mix well. Pour into the prepared casserole dish.
3. Sprinkle with the chopped pecans and bake for about 45 minutes.
